The Shun Classic 6-1/2-Inch Nakiri Knife is a professionally manufactured culinary knife capable of slicing and dicing through vegetables and fruits like a hot knife through butter; the Shun Classic Nakiri Knife also has many other features that are integrated into the design to allow for easy handling and use.
The Shun Nakiri Knife blade is 6 1/2 inches, while the size of the blade to handle is 11 by 2 inches. Manufactured from 33 total layers of high-grade stainless steel, the core of the knife is comprised of the Japanese super steel VG-10. 16 SUS410 high-carbon stainless steel layers encase the VG-10 core of the blade to ensure protection. Also, the Rockwell hardness rating of the Nakiri Knife is 60-61. The knife is designed to retain it’s sharp edge for years, with regular maintenance. A D-shaped Shun handle constructed from ebony-colored PakkaWood provides better handling support for the user, as well as to help prevent the knife from slipping in the user’s hand while cutting or slicing foods. The Damascus styling of the Nakiri Knife is brought on by the manufacturing process; the Damascus styling looks similar to Samurai swords used in Japan. This gives the knife a unique look and also creates microscopic air pockets due to the cladding process which helps to reduce friction in the knife when cutting.
The 6 1/2 inch Nakiri Knife has a cutting angle of 16 degrees per side, with a comprehensive angle of 32 degrees; this allows the knife to cut through vegetables and fruits effortlessly. Once the knife is done being used, it should be carefully hand washed and dried. The knife also comes equipped with a stainless-steel bolster with a steel-cap for the user to properly store the knife when not in use. As far as maintenance is concerned, the user should sharpen the Nakiri Knife using a professional knife sharpening tool or an Asian-style electric sharpener to maintain the knife’s sharp edge.
